Ingredients: Zucchini, yellow squash, ground beef, my mom's homemade tomato sauce, and red pepper flakes
What I Ate: A meat sauce over veggies. This is one of our favorite meals because it is really easy and fast. The most time consuming part is slicing/julienning the veggies.
To cook the veggies (in this case zucchini and yellow squash): bring some water to a boil (enough for the veggies) and while the water is heating up start to prep the veggies. You can cut them anyway you like, just make sure they are fairly even in size and the pieces aren't too big in any one dimension. Once the water boils, add the veggies and cook for about 6 minutes depending on the size of the veggie pieces. When the veggies are cooked strain them and rinse under cool water.
To make the sauce: heat some oil/fat in a pan over med/high heat. Once heated add the ground beef and brown. After the meat has browned add a pint or so of tomato sauce (I'm lucky enough that my mom gave me a bunch of her sauce but you can also use a 6 oz can of tomato paste plus a 14.5 oz can of diced roasted tomatoes. If you use canned tomatoes you might also want to add either garlic/onion powder or cook in fresh garlic/onion.) I also add red pepper flakes to the tomato and meat mixture just to add a bit of a kick. Cook this together for a couple of minutes.
To put it all together: put veggies in a bowl and top with the meat sauce and perhaps a pinch of salt.
