Ingredients: beef liver (1 oz), bacon fat, salt
What I Ate: Daily dose of liver. Liver is basically Mother Nature's multi-vitamin. Here are some of the nutrients you can find in high quantity in beef liver: Vit A, riboflavin, niacin, Vit B6, folate, Vit B12, pantothenic acid, choline, iron, phosphorus, zinc, copper, and selenium.
This morning I tested cow's liver again to see if I could handle it on its own and I was pleasantly surprised to see that I could. Here's how I prepared it: I used a pretty thin piece of liver about 1 oz in weight. Patted it dry as much as I could to remove the excess blood. Heated up some bacon fat. Salted both sides of the liver more than I thought I should. Fried it up in the hot bacon fat for 1-1.5 min per side or until cooked through. I also pressed down on the liver to get a nice sear.
