When: Breakfast 8/25/15 - Zucchini and eggs

Where: At home

Ingredients: Zucchini, red onions, and eggs

What I Ate: My mom sent me home with lots and lots of zucchini and eggs, so I made use of them. This was nothing fancy but it sure it taste amazing. 

I started by heating up some bacon fat and then adding the red onion and cooking it until it browned. Then I added the zucchini and cooked it until it was soft and golden brown. Lastly, I fried up two eggs in - you guessed it - bacon fat and placed them on top of the zucchini/onion mix. Done and done!
