Ingredients: Dover sole/flounder, cauliflower rice, avocado, mango salsa, kale and radicchio

What I Ate: Fish and all the veggies. I'm still working on liking cooked fish and this dinner definitely helped. Poaching fish in butter has become my favorite way to cook fish.

I steamed some cauliflower rice (Trader Joe’s frozen cauliflower rice is an amazing time saver), then added a little butter and salt. I poached the fish in butter with a little salt for seasoning. I also sautéed a bunch of kale with about ½ a radicchio in olive oil and a bit of salt – I used a minimal amount of olive oil and kept it on the heat for a little while so everything crisped up. To plate everything I heaped up a pile of cauliflower rice, topped it with the fish, then ½ an avocado and several tablespoons of my mango salsa and I served the kale with radicchio on the side. I'm not entirely sure the fish I bought was wild caught “Dover sole” it was probably some type of flounder; it was a bit too cheap to be true “Dover sole” but I don’t know enough about fish to really be able to tell the difference. Either way, it was really good.
