Ingredients: Watermelon radish, avocado, mango salsa, a little salt and lime juice

What I Ate: Vibrant Salad. I whipped this up in no time at all. I used a mandoline to thinly slice the watermelon radish and cut the avocado in big chunks. Then all I had to do was spoon in some of my mango salsa, plus a pinch of salt and a dash of lime juice. I mixed everything up and voila a great little salad to go with dinner.
